Black Bean and Rice Salad

Ingredients Instructions

  • 2 cups black beans, cooked and drained
  • 3 cups cooked brown rice
  • 2 celery stalks, finely chopped
  • 1/4 cup sliced spanish olives

  • 1/2 cup orange juice
  • 1 1/2 tablespoons cider vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons chopped gresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1/2 cup chopped scallions (green onions)
  • 2 teaspoons grated orange peel (fresh)
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cinnamon

  • 1/2 cup chopped walnuts
  • parsley

  1. In a mixing bowl, combine the drained beans with the rice, celery, and spanish olives.
  2. In a small bowl, mix dressing by combining orange juice, vinegar, olive oil, parsley, cilantro, scallions, orange peel, and spices.
  3. Pour the dressing over the bean/rice mixture and mix thoroughly.
  4. Add garnishes on top.
