Beef and Chipotle Burritos

Ingredients Instructions

  • 1.5 pounds boneless beef round steak, cut 3/4 inch thick
  • 14.5 ounce can diced tomatoes, undrained
  • 1 small onion, chopped
  • 2 canned chipotle peppers in adobo sauce
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • 1 clove garlic, minced

  • 6 warmed tortillas
  • 3/4 cub shredded cheddar cheese
  • salsa
  • shredded jicama (optional)
  • sour cream (optional)

  1. Trim fat from meat and cut into pieces.
  2. Put meat, tomatoes, onion, peppers, oregano, cumin, and garlic into slow cooker.
  3. Cook on low heat for 8 hours.

  4. Shred meat and mix with sauce.
  5. Fill tortillas with meat, salsa, jicama, and sour cream.
