Japanese Chicken Salad

Croutons

  • 2 tablespoons salad oil
  • 1/2 cup sliced almonds
  • 2 tablespoons sesame seeds
  • 1 package (3 oz.) oriental noodle soup mix (noodles crumbled)

Croutons

  1. Heat oil in frying pan.
  2. Add almonds, sesame seed, noodles.
  3. Stir-fry until golden brown.

Dressing

  • 1/3 cup salad oil
  • 1/3 cup rice vinegar
  • 5 teaspoons sugar
  • 1/2 teaspoon pepper

Dressing

  1. Mix.

Salad

  • croutons (from above)
  • dressing (from above)
  • 2 cups cooked boned chicken breast
  • 4 cups finely shredded green cabbage
  • 1/2 cup chopped green onions (with tops)

Salad

  1. Combine chicken, cabbage, onions, croutons, and dressing.
  2. Salt to taste.
  3. Makes 6 servings.
