This is one of my favorite summer-time lunches.

Ingredients Instructions

  • 1 1/2 cups veggies

  • 1 large tortilla
  • 1/4 cup beans
  • sprinkle of cheese
  • 1/4 cup salsa

  1. Steam vegetables in microwave.
  2. Lay out tortilla on a plate
  3. Put everything on tortilla: beans, cheese, veggies, and salsa
  4. Microwave for 90 seconds
  5. While microwaving, heat skillet and a little oil.
  6. Move quesadilla from microwave to skillet and heat until torilla is brown and toasty on the outside.
