Vegetarian Lasagna

Ingredients Instructions

  • 1 large jar spaghetti sauce
  • 1 pound broccoli
  • 1/2 of a 6 oz package of prewashed spinach
  • 2 small cans mushrooms, drained
  • 1 16 oz. carton ricotta cheese
  • 1 egg
  • Parmesan cheese
  • lasagna noodles

  1. Oven: 325
  2. Spread a layer of spaghetti sauce in the bottom of a 9x13 inch pan
  3. Add a layer of noodles (3 noodles)
  4. Mix broccoli, spinach, and mushrooms. Add vegetable layer to pan.
  5. Mix ricotta cheese, egg, and 1/4 cup Parmesan cheese. Add as next layer to pan
  6. Add second, and final, layer of noodles.
  7. Spread remaining spaghetti sauce, sprinkle parmesan cheese over the top,
  8. Bake 45 minutes. Remove foil and bake another 15 minutes.
