Vegetable Quiche

This was inspired by a recipe in "500 Greatest-Ever Vegetarian Recipes."

Ingredients Instructions

  • one prepared pie crust
  • two tablespoons water
  • one 8 ounce package sliced fresh mushrooms
  • one onion, chopped
  • two carrots, chopped
  • one dozen asparagus spears, chopped
  • 3 eggs
  • 3/4 cup nonfat milk
  • one cup grated cheddar cheese
  • 1/2 cup chopped parsley
  • 1/2 teaspoon salt

  1. Oven: 350
  2. Simmer vegetables and water in a covered pan until soft.
  3. Mix eggs, milk, cheese, parsley, salt, pepper in bowl.
  4. Put vegetables in pie crust.
  5. Pour milk mixture over vegetables.
  6. Bake 20 minutes.
