2 cups black beans, cooked and drained

3 cups cooked brown rice

2 celery stalks, finely chopped

1/4 cup sliced spanish olives

1/2 cup orange juice

1 1/2 tablespoons cider vinegar

In a mixing bowl, combine the drained beans with the rice, celery, and spanish olives.

In a small bowl, mix dressing by combining orange juice, vinegar, olive oil, parsley, cilantro, scallions, orange peel, and spices.

Pour the dressing over the bean/rice mixture and mix thoroughly.

Add garnishes on top.
