one prepared pie crust

two tablespoons water

one 8 ounce package sliced fresh mushrooms

one onion, chopped

two carrots, chopped

one dozen asparagus spears, chopped

3 eggs

3/4 cup nonfat milk

one cup grated cheddar cheese

1/2 cup chopped parsley

1/2 teaspoon salt

Oven: 350
-
Simmer vegetables and water in a covered pan until soft.

Mix eggs, milk, cheese, parsley, salt, pepper in bowl.

Put vegetables in pie crust.

Pour milk mixture over vegetables.

Bake 20 minutes.
